Why is Taekwondo kicking technique superior to...

Since its foundation Taekwondo was constituted as martial sport, not a martial art with rigid, traditional principles. Therefore, Taekwondo was constantly upgraded and today's Taekwondo technique differs from that 30 years ago. At the same time, scoring method is adjusted to encourage kicking technique by banning head punch and hits below belt. In other sports in which these hits are allowed, head kicks lose their importance, because it is much easier to punch opponent in the head or to do a"sweep".

Why is WTF an Olympic sport and ITF is not...

WTF (World Taekwondo Federation) Taekwondo is a full contact sport with no head punches. ITF (International Taekwondo Federation) Taekwondo is a semi contact sport with allowed head punches leaving space for injuries. A slight injury possibility during WTF contests was an important factor for including this discipline as a regular sport on Olympic Games. Together with Judo, WTF Taekwondo is the first asian martial art to become an Olympic sport.

Boards that are used for break tests are 2.5cm...

Boards used for breaking tests have to be 30x30x2.5 cm or 25x25x2.5 cm (in which case it's harder to break them). Depending on a student's belt one breaks one or more boards with various techniques.
Correct board holding is the key to successful breaking, because even the slightest move of a person (persons) holding the board can diminish the strength of the punch and evoke an injury. The hardest board to break is the one that is held lightly (with two fingers of the same hand).
